Introduced outside the Andes region approximately four centuries ago, potatoes have since become an integral part of much of the world’s food supply. Potatoes sit behind only maize, wheat and rice as the world’s fourth largest food crop. As of 2013, approximately 368 million metric tons of potatoes were produced globally with The People’s Republic of China leading the contribution at 89 million metric tons. A popular, versatile carbohydrate, potatoes are rich, not only in dietary fibre, but many essential vitamins and minerals and, unprocessed, are an important part of a healthy and varied diet.
