The carrot, traditionally orange, is one of the most versatile root vegetables around – a result of its sweet flavour, which means it can be used raw or cooked, in sweet or savoury dishes.
Strangely all carrots were purple until the Middle Ages – when Dutch carrot growers started growing the orange variety, as a tribute to their king, William 1 of Orange.
The adage that carrots can help you see in the dark is actually based on scientific fact, as they are very high in beta-carotene, an important nutrient in maintaining healthy eyesight.
